Margaret Peters Morris with her team at Glengarry Fine Cheese in Lancaster, and in particular cheesemaker Bill McDonell, have again achieved top finishes at the Royal Agricultural Winter Fair held in Toronto and on the world stage at the World Cheese Awards in Bern, Switzerland.
The annual World Cheese Awards brings together cheesemakers, retailers, buyers and food analysts to judge over 5,000 cheeses from over 40 countries. Each year, the awards are hosted by a different nation, spotlighting local cheesemaking artisans along with their international counterparts. Glengarry Fine Cheese won gold for its Celtic Blue Reserve and silver for Lankaaster Aged; the top two varieties that have been made since the start of production in the fall of 2008 for the Lancaster cheesemaker.
Celtic Blue Reserve shone as well at the 103rd Royal Winter Fair, taking home first place. In addition, Bridge End Bloomy won third place in the Soft Bloomy Rind category. As well, Udder Way Artisan Cheese Co., recently merged with Glengarry Fine Cheese sharing production and sales space, won first place for its Cabernet Merlot Cheddar, a wine-soaked, flavoured cheese.
While the original recipes for the cheese varieties were developed by Margaret Peters Morris, her cheesemaker for the past five years, Billy McDonell, has been winning at the Royal, the Global Cheese Awards in the UK and at the World Cheese Awards in Switzerland.
Glengarry Fine Cheese uses milk from Krol Farms and Riemann Farms in Lancaster, neighbours of the cheese plant. Deliveries of milk from local herds weekly guarantee freshness and quality of the milk used to produce cheese and those yummy curds called Squeaks. “We do see the seasonal differences which is a natural process, and we work with it accordingly when making cheese,” said Peters Morris.
The company also supplies clients with cheesemaking supplies including moulds, starters, cultures and accessories. US tariffs have forced the business to increase their prices but Peters Morris has not seen a negative impact from those increases.
